    The Long Toast

A milestone marked the way it deserves — days built around your people, ending at one table we spend months arranging.

    5 nights · 2–12 guests
Champagne, France — or where your occasion leads

Some occasions should not be handed to a restaurant’s private room and a printed menu. A fortieth anniversary. A vow renewal. A parent’s eightieth year, with three generations in one place at last. The Long Toast is our celebration journey: five nights shaped entirely around one moment and the people you want beside you for it.

We anchor it in Champagne because no region on earth understands ceremony better — the chalk cellars, the quiet villages, the patient idea that time in the dark becomes joy at the table. The same arc translates to Tuscany or the Amalfi Coast if your story lives elsewhere; the region is the setting, not the point.

The week builds deliberately. The early days gather everyone and let the group find its rhythm. The middle days are generous and unforced. The final evening is the reason the journey exists: one long table, in a place that does not usually set one, arranged so carefully that the only thing left for you to do is raise a glass.

It works at two and it works at twelve. What it does not do is scale into an event with a run sheet — if you are imagining a wedding weekend with a hundred guests, we will happily say so and point you to people who do that beautifully.

    The Substance

    What You’ll Actually Do

A first-night dinner that lays out the days ahead like a menu — what we have arranged, and one thing we keep back as a surprise.

A private walk through the chalk cellars beneath Reims, ending with a glass poured forty metres underground, in the cool and the quiet.

An afternoon with a grower family in the Vallée de la Marne, tasting at their kitchen table rather than in a marketing suite.

The final-night table: a single long dinner in a private setting — a cellar, a courtyard, a maison’s own dining room — with a toast we help you write if you want the help, and stay well clear of if you don’t.

A case from the week chosen at the table and arranged for cellaring at home — so the journey ends with a future appointment, not just a memory.

For vow renewals and landmark birthdays, a photographer for one golden hour only — enough to remember the evening by, never enough to interrupt it.

The best toast of the evening is rarely the first one. Our job is to build a table where the fourth toast — the unplanned one — happens on its own.

    When to Travel

    Timing, Honestly

Champagne is at its best from late April through October; September adds harvest energy but tightens estate calendars. Winter trades vineyard green for candlelit cellars and loses less than you would think. The honest answer: pick the date that matters — your date — and we will make the region work around it.
